(Good luck finding flowers! unless you grow tarragon yourself &#8211; and I&#8217;m sure Martha does.)<\/em><\/p>\n<\/div>\n<div class=\"recipe-summary margin-8-bottom\">\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 1\/2 lb fingerling or other small potatoes, cut into 1\/2-inch-thick rounds<\/li>\n<li>coarse salt<\/li>\n<li>8 oz sugar snap peas, plus more, split, for garnish (optional)<\/li>\n<li>1\/2 small red onion, thinly sliced<\/li>\n<li>Creamy Tarragon Vinaigrette<\/li>\n<li>freshly ground pepper<\/li>\n<li>fresh tarragon and tarragon flowers, for garnish (optional)<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Cover potatoes with cold water by 2 inches in a medium saucepan.<\/li>\n<li>Bring to a boil.<\/li>\n<li>Add 3 tablespoons salt.<\/li>\n<li>Reduce heat to medium-high.<\/li>\n<li>Simmer potatoes until tender, about 8 minutes.<\/li>\n<li>Transfer to paper towels to drain.<\/li>\n<li>Bring another medium saucepan of water to a boil.<\/li>\n<li>Add 2 tablespoons salt.<\/li>\n<li>Blanch snap peas until just tender, 1 to 2 minutes.<\/li>\n<li>Let cool in an ice-water bath.<\/li>\n<li>Drain, and pat dry.<\/li>\n<li>Toss potatoes, snap peas, onion, and vinaigrette in a bowl.<\/li>\n<li>Season with salt and pepper.<\/li>\n<li>Garnish with split snap peas,tarragon, and tarragon flowers, if desired.<span class=\"print-footer-copyright\">\u00a0<\/span><\/li>\n<\/ol>\n<p><strong>Serves:\u00a0\u00a0<\/strong>6-8<\/p>\n<p><span class=\"print-footer-copyright\"><span class=\"recipe-copyright-text__brand\"><strong>Source: <\/strong>marthastewart.com<\/span>.\u00a0<\/span><\/p>\n<p><strong>Creamy Tarragon Vinaigrette<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 tsp tarragon vinegar<\/li>\n<li>3\/4 tsp Dijon mustard<\/li>\n<li>coarse salt<\/li>\n<li>1\/4 c extra-virgin olive oil<\/li>\n<li>1\/4 c sour cream<\/li>\n<li>2 Tab finely chopped fresh tarragon<\/li>\n<li>freshly ground pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Stir together tarragon vinegar and Dijon mustard.<\/li>\n<li>Season with coarse salt.<\/li>\n<li>Pour in olive oil in a slow, steady stream, whisking until emulsified.<\/li>\n<li>Stir in sour cream and tarragon.<\/li>\n<li>Season with freshly ground pepper.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>The richness of creamy fingerling potatoes is lightened by snap peas, slivers of red onion, and tarragon flowers.
