{"id":822,"date":"2014-10-16T08:41:07","date_gmt":"2014-10-16T14:41:07","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=822"},"modified":"2015-03-18T10:19:43","modified_gmt":"2015-03-18T16:19:43","slug":"baked-tomato-grits","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/baked-tomato-grits.html","title":{"rendered":"\u00a0Baked Tomato Grits"},"content":{"rendered":"<p><em>No more\u00a0boring\u00a0grits!<\/em><\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>4 Tab butter, plus more for coating skillet<\/li>\n<li>2 small shallot chopped<\/li>\n<li>4 cloves garlic, chopped<\/li>\n<li>2 Tab tomato paste<\/li>\n<li>4 c low sodium chicken broth<\/li>\n<li>1 c heavy whipping cream<\/li>\n<li>1 1\/2 c quick cooking grits<\/li>\n<li>16 oz oil packed sun dried tomatoes, drained well and roughly chopped<\/li>\n<li>salt and freshly ground black pepper<\/li>\n<li>8 oz log goat cheese, crumbled<\/li>\n<\/ul>\n<ol>\n<li><b>Directions: <\/b><\/li>\n<li>Butter two 8 inch pie pans.<\/li>\n<li>Add the 4 tablespoons of butter to a medium sized saucepan over medium heat.<\/li>\n<li>Once the butter foams, add the shallots and garlic and saute until tender, about 3 \u2013 4 minutes.<\/li>\n<li>Stir in the tomato paste.<\/li>\n<li>Then add the chicken broth and whipping cream and bring to a simmer.<\/li>\n<li>One simmering, slowly and gradually whisk in the grits.<\/li>\n<li>Keep stirring until the grits become thick, about 8 \u2013 10 minutes.<\/li>\n<li>Add the chopped sun dried tomatoes and stir until thoroughly mixed.<\/li>\n<li>Season with salt and pepper to taste.<\/li>\n<li>Place grits in the prepared pie pans and top with the crumbled goat cheese.<\/li>\n<li>Bake at 350\u00ba for 25 \u2013 30 minutes.<\/li>\n<li>Remove the pans from the oven and let cool for 5 \u2013 10 minutes before serving.<\/li>\n<li>Slice each into 6 triangles and serve.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>12<\/p>\n<p align=\"LEFT\"><b>Source: <\/b> Blue Grass Kitchen, Charleston, West Virginia<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>No more\u00a0boring\u00a0grits!
