{"id":842,"date":"2014-10-07T15:54:30","date_gmt":"2014-10-07T21:54:30","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=842"},"modified":"2015-03-30T15:20:36","modified_gmt":"2015-03-30T21:20:36","slug":"brown-rice-with-vegetables","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/brown-rice-with-vegetables.html","title":{"rendered":"Brown Rice with Vegetables"},"content":{"rendered":"<p align=\"LEFT\"><em>A really pretty starch to serve with grilled meat.<\/em><\/p>\n<p align=\"LEFT\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>2 Tbs olive oil<\/li>\n<li>1 \u00bc c red onion diced<\/li>\n<li>2 \u00bd c zucchini, diced<\/li>\n<li>2 \u00bd c frozen corn, thawed<\/li>\n<li>2 c grape tomatoes, halved<\/li>\n<li>6 cloves garlic<\/li>\n<li>\u00bd c fresh parsley, chopped<\/li>\n<li>6 Tbs chicken bouillon granules<\/li>\n<li>6 c instant brown rice<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>Prepare rice per instructions adding bouillon granules to the water.<\/li>\n<li>Set aside when done.<\/li>\n<li>Heat the olive oil in a skillet over medium heat<\/li>\n<li>Add the onion and saut\u00e9 3-4 minutes until soft.<\/li>\n<li>Add the corn and zucchini and cook for an additional 3 minutes.<\/li>\n<li>Stir in the halved tomatoes and parsley, saut\u00e9 for 1 minute or until tomatoes almost wilt.<\/li>\n<li>Keep rice and vegetables to separate until ready to serve.<\/li>\n<li>Heat vegetable mixture and rice separately in microwave<\/li>\n<li>Combine the vegetable mixture and rice and season with salt and freshly cracked pepper to taste.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>10<\/p>\n<p align=\"LEFT\"><b>Source: <\/b> For the Love of Cooking Recipe Blog<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>A really pretty starch to serve with grilled meat.
