{"id":8453,"date":"2020-08-11T11:09:42","date_gmt":"2020-08-11T17:09:42","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=8453"},"modified":"2026-03-30T08:30:50","modified_gmt":"2026-03-30T14:30:50","slug":"roasted-corn-dip","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/roasted-corn-dip.html","title":{"rendered":"Roasted Corn Dip"},"content":{"rendered":"<p><em>A recipe is just a suggestion &#8211; feel free to add your own touch.<\/em><\/p>\n<p><strong>Ingredients &#8211; corn:<\/strong><\/p>\n<ul>\n<li>3 ears of fresh corn, husked<\/li>\n<li>1 Tab olive oil<\/li>\n<li>garlic salt<\/li>\n<li>coarse black pepper<\/li>\n<li>cayenne pepper<\/li>\n<\/ul>\n<p><strong>Directions &#8211; corn:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 400\u00b0.<\/li>\n<li>Line a baking sheet with a rim\u00a0 with foil.<\/li>\n<li>Rub oil over each ear of corn.<\/li>\n<li>Sprinkle with garlic salt, black pepper and cayenne.<\/li>\n<li>Line ears of corn up on prepared baking sheet.<\/li>\n<li>Bake for 15 &#8211; 20 minutes, turning halfway through.\u00a0 If not brown enough turn on the broiler &#8211; but watch carefully.<\/li>\n<li>Set aside to cool.<\/li>\n<li>When cool, cut the kernels off the cobs.<\/li>\n<\/ol>\n<p><strong>Ingredients &#8211; dip:<\/strong><\/p>\n<ol>\n<li>8 oz cream cheese, softened<\/li>\n<li>1\/2 c mayonnaise<\/li>\n<li>1 1\/2 c (6 oz) Costco Mexican cheese blend (or other finely grated cheese)<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>1\/2 c diced chilies (4 oz)<\/li>\n<li>1\/4 c chopped chives<\/li>\n<li>1\/4 c sun-dried tomatoes, chopped<\/li>\n<li>5 drops Frank&#8217;s Hot Sauce (more, depending on how spicy your taste is)<\/li>\n<\/ol>\n<p><b>Directions &#8211; dip:<\/b><\/p>\n<ol>\n<li>Preheat the oven to 350\u00b0.<\/li>\n<li>Cream together the cream cheese, mayo, grated cheese.<\/li>\n<li>Add grated cheese, garlic, chilies, chives, tomatoes, and hot sauce.<\/li>\n<li>Mix well.<\/li>\n<li>Add corn.<\/li>\n<li>Place in oven-poof dish.<\/li>\n<li>Bake for 20 &#8211; 25 minutes, until bubbly and golden brown.<\/li>\n<li>Serve with tortilla chips or study crackers like Triscuits.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> 6<\/p>\n<p><strong>Source:\u00a0\u00a0<\/strong>This is a major variation on a recipe in the July\/August 2020 issue of Colorado Life<\/p>\n","protected":false},"excerpt":{"rendered":"<p>A recipe is just a suggestion &#8211; feel free to add your own touch.
