{"id":876,"date":"2014-10-19T14:57:03","date_gmt":"2014-10-19T20:57:03","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=876"},"modified":"2016-02-25T15:31:48","modified_gmt":"2016-02-25T22:31:48","slug":"minnesota-wild-rice-soup","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/minnesota-wild-rice-soup.html","title":{"rendered":"Minnesota Wild Rice Soup"},"content":{"rendered":"<p style=\"text-align: left\" align=\"CENTER\"><em>Even if you are not a fan of wild rice, you will like this creamy soup.<\/em><\/p>\n<p style=\"text-align: left\" align=\"CENTER\"><b>Ingredients:<\/b><\/p>\n<ul>\n<li>3 qts chicken stock<\/li>\n<li>1 1\/3 c wild rice<\/li>\n<li>2 c finely chopped shallots<\/li>\n<li>1 qt half and half<\/li>\n<li>1\/2 c flour<\/li>\n<li>1 Tab fresh thyme leaves<\/li>\n<li>1 tsp freshly ground black pepper<\/li>\n<li>2 c thinly sliced small button mushrooms<\/li>\n<li>\u00bc c maple syrup<\/li>\n<li>Kosher salt, to taste<\/li>\n<li>finely cut\u00a0chives for serving<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Directions:<\/b><\/p>\n<ol>\n<li>In a 8 quart saucepan, bring the stock and rice to a boil over medium high heat.<\/li>\n<li>Cover and cook, stirring , for 40 minutes.<\/li>\n<li>Add shallots and continue to cook until rice is tender, 5 \u2013 10 minutes.<\/li>\n<li>In a small bowl, whisk half and half, flour, thyme and pepper.<\/li>\n<li>Whisk into soup.<\/li>\n<li>Add mushrooms and cook, stirring, until soup thickens, about 15 minutes.<\/li>\n<li>Stir in the maple syrup, salt and pepper.<\/li>\n<li>Divide soup between soup plates.<\/li>\n<li>Garnish with chives.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>10-12<\/p>\n<p align=\"LEFT\"><b>Source: <\/b> Saveur.com<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>Even if you are not a fan of wild rice, you will like this creamy soup.
