{"id":8956,"date":"2021-11-11T13:47:31","date_gmt":"2021-11-11T20:47:31","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=8956"},"modified":"2021-11-11T13:47:31","modified_gmt":"2021-11-11T20:47:31","slug":"chicken-and-rice-casserole","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/chicken-and-rice-casserole.html","title":{"rendered":"Chicken and Rice Casserole"},"content":{"rendered":"<p><em>An easy, very flexible, Chicken and Rice casserole, made in just one pan, with a few simple ingredients.\u00a0 It is almost\u00a0&#8220;throw in what is left in the fridge!&#8221;<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 1\/2 c long grain white rice &#8211; uncooked<\/li>\n<li>2 cans cream of chicken\/mushroom soup (I used 2 c sour cream)<\/li>\n<li>2 c milk (I had leftover 1\/2 and1\/2)<\/li>\n<li>1 envelope (3 heaping Tab) onion soup mix<\/li>\n<li>1 1\/2 c shredded cheddar cheese, divided (always needs more cheese!)<\/li>\n<li>3 thick boneless skinless chicken breasts cut in half or 6 thighs<\/li>\n<li>salt and freshly ground black pepper<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350 \u00b0.<\/li>\n<li>Grease a deep 9&#215;13 pan (or similar size casserole dish) with non-stick cooking spray.<\/li>\n<li>Set aside.<\/li>\n<li>Add rice, cream of soups, milk, water and onion soup seasoning to a bowl.<\/li>\n<li>Stir to combine.<\/li>\n<li>Pour mixture into prepared pan.<\/li>\n<li>Sprinkle with half of the shredded cheddar cheese.<\/li>\n<li>Nestle chicken breasts into the rice mixture.<\/li>\n<li>Cover the dish tightly with aluminum foil. (the pan will be very full!)<\/li>\n<li>Bake for 1 hour 30 min to 2 hours, or until rice is tender and chicken is cooked through. Time may vary depending on oven, altitude.<\/li>\n<li>Remove from oven and sprinkle remaining cheese on top.<\/li>\n<li>Allow to cool for 15-20 minutes before serving.<\/li>\n<\/ol>\n<p><strong>Serves:\u00a0<\/strong> 6<br \/>\n<strong>Source:\u00a0\u00a0<\/strong>tastsbetterfromscratch.com<\/p>\n<p><em>Cheese:<\/em> Leave it out, or substitute Colby jack, mozzarella or Swiss.<br \/>\n<em>Rice:<\/em> Minute rice will not work with this recipe. Brown rice would require<br \/>\nadditional liquid (at least 1\/2 cup) and longer cooking time, so if using brown<br \/>\nrice, suggest you use chicken thighs, instead of breasts, so the chicken doesn&#8217;t<br \/>\novercook\/dry out.<br \/>\n<em>Herbs:<\/em> If you&#8217;d like to add additional flavor, consider adding fresh thyme,<br \/>\nparsley, freshly minced garlic or garnish with fresh basil.<br \/>\n<em>Broccoli Chicken and Rice:<\/em> Add 2 cups chopped broccoli florets to the<br \/>\ncasserole before baking.<br \/>\n<em>Veggies:<\/em> Feel free to add chopped mushrooms, onions, green peppers, green<br \/>\nbeans, broccoli, etc.<br \/>\n<em>Cream of soup:<\/em> You can use any type of cream of soup for this recipes including chicken, mushroom, or celery.<br \/>\n<em>Instant Pot Chicken and Rice:<\/em> Reduce water to 1\/2 cup and milk to 1 cup.<br \/>\nOnly use 1 can of cream of soup. Cook on high pressure\/manual setting for 8-<br \/>\n10 minutes (depending on thickness of the chicken breasts). Allow to naturally release for 10 minutes.<br \/>\n<em>Make ahead Instructions:<\/em> Prepare the dish but do not bake. Cover it well and<br \/>\nstore in the refrigerator overnight.<br \/>\n<em>Freezing Instructions:<\/em> Prepare the dish but do not bake. Cover it well with<br \/>\nplastic wrap and tinfoil and store it in the freezer for up to 3 months.
