{"id":903,"date":"2014-10-28T07:16:53","date_gmt":"2014-10-28T13:16:53","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=903"},"modified":"2016-05-20T14:26:57","modified_gmt":"2016-05-20T20:26:57","slug":"arizona-cardinals-chicken-quesadillas","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/arizona-cardinals-chicken-quesadillas.html","title":{"rendered":"Arizona Cardinals Chicken Quesadillas"},"content":{"rendered":"<p><em>Good for lunch too!<\/em><\/p>\n<p><strong>\u00a0Quesadillas Ingredients:<\/strong><\/p>\n<ul>\n<li>2 boneless, skinless chicken breast halves<\/li>\n<li>10 flour tortillas (7-8 inches)<\/li>\n<li>2 c Queso Fresco, shredded (\u00bd lb)<\/li>\n<li>Olive oil<\/li>\n<li>Salt and pepper<\/li>\n<li>Emerald Sauce<\/li>\n<li>Vegetable oil<\/li>\n<\/ul>\n<p><strong>Quesadillas Instructions:<\/strong><\/p>\n<ol>\n<li>Flatten chicken breasts between sheets of wax paper until less than 1\/2-inch thick.<\/li>\n<li>Season with salt and pepper.<\/li>\n<li>Heat 1 tablespoon olive oil in a medium skillet and saute chicken breasts untilbrowned, about 3 minutes a side.<\/li>\n<li>Transfer to a heatproof dish and place in oven until cooked through and internaltemperature is 175 degrees, about 10 minutes.<\/li>\n<li>Remove from oven and let rest on cutting board for 5 minutes.<\/li>\n<li>Shred chicken.<\/li>\n<li>On half of each tortilla place 2 tablespoons of the Queso Fresco.<\/li>\n<li>Top with some chicken.<\/li>\n<li>Drizzle with Emerald Sauce.<\/li>\n<li>Top with another tablespoon of Queso Fresco.<\/li>\n<li>Fold over the top of the tortilla.<\/li>\n<li>Brush each side with vegetable oil.<\/li>\n<li>Cook each tortilla in a skillet until lightly browned on each side and crispy.<\/li>\n<li>Place on a baking sheet.<\/li>\n<li>Reheat in 350\u00b0 oven for 10 minutes.<\/li>\n<li>To serve: Cut each quesadilla into 4 wedges and drizzle with Emerald Sauce.<\/li>\n<\/ol>\n<p><strong>Emerald Sauce Ingredients:<\/strong><\/p>\n<ul>\n<li>1\/4 c chopped fresh ginger<\/li>\n<li>3\/4 c chopped green onion<\/li>\n<li>2 tap salt<\/li>\n<li>1 c vegetable oil<\/li>\n<\/ul>\n<p><strong>Emerald Sauce Instructions:<\/strong><\/p>\n<p>Combine all ingredients in a blender or food processor and puree.<\/p>\n<p><strong>Serves:<\/strong> 40 piece<\/p>\n<p><strong>Source:<\/strong> sportsglutton.com<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Good for lunch too! \u00a0Quesadillas Ingredients: 2 boneless, skinless chicken breast halves 10 flour tortillas (7-8 inches) 2 c Queso Fresco, shredded (\u00bd lb) Olive oil Salt and pepper Emerald Sauce Vegetable oil Quesadillas Instructions: Flatten chicken breasts between sheets of wax paper until less than 1\/2-inch thick.
