It&#8217;s one of the best ways to cook zucchini!\u00a0 This recipe can also be made using yellow squash in place of zucchini.\u00a0 For extra flavor you can also finish with a little lemon juice and\/or zest.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 lbs. zucchini (about 6 small or 4 medium), sliced into 1\/2-inch thick rounds<\/li>\n<li>2 Tab olive oil<\/li>\n<li>2 garlic cloves, finely minced (2 tsp)<\/li>\n<li>1 1\/2 tsp Italian seasoning<\/li>\n<li>1\/2 c grated parmesan cheese<\/li>\n<li>Salt and freshly ground black pepper<\/li>\n<li>2 Tab finely chopped fresh parsley<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350\u00b0.<\/li>\n<li>For optionally for easier clean up line a rimmed 18 by 13-inch rimmed baking sheet with aluminum foil.<\/li>\n<li>Spray baking sheet with non-stick cooking spray.<\/li>\n<li>In a small mixing bowl stir together olive oil, garlic, Italian seasoning, salt and pepper.<\/li>\n<li>Place zucchini coins in a large mixing bowl.<\/li>\n<li>Pour oil mixture over zucchini.<\/li>\n<li>Toss well until evenly coated.<\/li>\n<li>Pour onto baking sheet then spread out into a single layer.<\/li>\n<li>Top with parmesan.<\/li>\n<li>Bake in preheated oven until just starting to soften about 7 &#8211; 9 minutes.<\/li>\n<li>Remove zucchini and transfer oven rack closer to broiler.<\/li>\n<li>Preheat broiler.<\/li>\n<li>Let broil until cheese is golden brown and zucchini is tender, about 2 &#8211; 3 minutes longer (keep a close eye on it).<\/li>\n<li>Sprinkle with parsley and serve warm.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong> 6<br \/>\n<strong>Source: <\/strong>Cooking Classy<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Fresh summer zucchini is sliced into coins and tossed with olive oil, garlic, and herbs then sprinkled with parmesan cheese and oven baked.
