If you need to substitute corn syrup in this peanut brittle recipe, you can substitute cup for cup honey, light molasses, or agave nectar. You could also substitute a combination of these ingredients and please note that with any of these substitutions, the peanut brittle will have a lightly different taste, texture and consistency as well.\u00a0 For something different, add 2 teaspoons cinnamon or 1\/2 teaspoon cinnamon and 1\/2 teaspoon cayenne pepper mixed with the peanuts.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3\/4 c water<\/li>\n<li>3 c sugar<\/li>\n<li>1\/2 c light corn syrup<\/li>\n<li>1\/4 tsp cream of tartar<\/li>\n<li>3 Tab butter, cubed<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1 tsp vanilla<\/li>\n<li>3 c roasted salted peanuts<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>Bring water to a boil in a large, heavy pan.<\/li>\n<li>Remove from heat and stir in sugar and cream of tartar until disolved.<\/li>\n<li>Then add the corn syrup.<\/li>\n<li>Cook to 250\u00b0.\u00a0 Takes about 15 minutes.\u00a0 Use a candy thermometer.<\/li>\n<li>Warm the peanuts on the baking sheet 250\u00b0 for a few minutes.<\/li>\n<li>Then add all the peanuts.<\/li>\n<li>Stir occasionally to submerge the nuts.\u00a0 Cook to 250\u00b0.<\/li>\n<li>Sprinkle with baking soda and vanilla.\u00a0 It will foam up &#8211; a lot!<\/li>\n<li>Stir lightly.<\/li>\n<li>Pour onto well buttered warm cookie sheet or slab.\u00a0 Carefully!\u00a0 Hot sugar can really burn.<\/li>\n<li>Spread rapidly with a rubber spatula until you can see through the brittle coat.<\/li>\n<li>Cool.<\/li>\n<li>Break into pieces.<\/li>\n<li>Store tightly covered.<\/li>\n<\/ol>\n<p><strong>Serves:<\/strong>\u00a0 50 &#8211; 3 lbs<br \/>\n<strong>Source: <\/strong>Beth Kerfoot and Food Network Kitchen<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Everyone&#8217;s grandmother had a recipe for peanut brittle.\u00a0 \u00a0Beth&#8217;s turns out pretty darn good!
