Olive Oil<br \/>\nKosher Salt<\/p>\n<p>\u00bd c Butter<br \/>\n\u00bc c Orange Juice<br \/>\n\u00bc c Marmalade<br \/>\n2 tbsp. Candied Ginger \u2013 diced<\/p>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 375F<\/li>\n<li>Slice yams into 1 inch cubes. Place in shallow roasting pan and toss with Olive Oil. Sprinkle with salt. Roast until brown and tender (~20-30 minutes).<\/li>\n<li>While the yams roast, cook butter, orange juice, marmalade, and ginger in microwave for 30-60 seconds, or until melted and bubbly.<\/li>\n<li>Place cooked yams in medium casserole dish and drizzle with butter mixture.
