{"id":996,"date":"2014-11-06T04:56:54","date_gmt":"2014-11-06T11:56:54","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/margie\/?p=996"},"modified":"2016-01-25T05:29:31","modified_gmt":"2016-01-25T12:29:31","slug":"spring-mix-salad-white-balsamic-caramel-vinaigrette-and-candied-pecans-salad","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/spring-mix-salad-white-balsamic-caramel-vinaigrette-and-candied-pecans-salad.html","title":{"rendered":"Spring Mix Salad  White Balsamic Caramel Vinaigrette and Candied Pecans  Salad"},"content":{"rendered":"<p align=\"LEFT\"><em>I know &#8211; caramel in salad dressing???? \u00a0 But it does work!<\/em><\/p>\n<p align=\"LEFT\"><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>6 oz Spring mix<\/li>\n<li>6 oz Spinach<\/li>\n<li>\u00bd c fresh blueberries<\/li>\n<li>\u00bd c fresh strawberries, sliced<\/li>\n<li>1 c candied or glazed pecans<\/li>\n<li>5 oz goat cheese, crumbled<\/li>\n<li>parsley<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Dressing Ingredients:<\/b><\/p>\n<ol>\n<li>1 egg<\/li>\n<li>1 tsp Dijon mustard<\/li>\n<li>1 c caramel sauce<\/li>\n<li>pinch of salt<\/li>\n<li>\u00bd c white balsamic vinegar<\/li>\n<li>1 2\/3 c salad oil<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Pecan Ingredients:<\/b><\/p>\n<ul>\n<li>1\/2 c pecans<\/li>\n<li>1 tbsp brown sugar<\/li>\n<li>1 tbsp warm water<\/li>\n<li>2-3 pinches salt<\/li>\n<li>2-3 pinches ground cinnamon<\/li>\n<\/ul>\n<p align=\"LEFT\"><b>Dressing Directions:<\/b><\/p>\n<ol>\n<li>Put the first 5 dressing ingredients (egg, mustard, caramel, salt and white balsamic vinegar) in a bowl.<\/li>\n<li>Blend together, using an immersion blender or hand mixer.<\/li>\n<li>Then, slowly add the oil and continue blending to create a creamy dressing.<br \/>\nMakes about 3 cups.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Pecan Directions:<\/b><\/p>\n<ol>\n<li>Put the pecans to a skillet which has been heated over medium heat, and heat the pecans,\u00a0shaking the pan from time to time, until the pecans become fragrant.<\/li>\n<li>Combine the sugar, water, salt and cinnamon, in a small glass, stirring until the sugar has\u00a0dissolved.<\/li>\n<li>Pour over the pecans in the skillet and cook stirring until the water has evaporated and\u00a0the pecans are covered in a glaze.<\/li>\n<li>Empty the pecans onto parchment paper, trying to keep them in a single layer. cool.<\/li>\n<\/ol>\n<p align=\"LEFT\">Makes \u00bd cup<\/p>\n<p align=\"LEFT\"><b>Salad Assembly Directions<\/b><\/p>\n<ol>\n<li>Mix spring mix and spinach together in bowl.<\/li>\n<li>Toss with 1 \u00bd cups dressing.<\/li>\n<li>Arrange on salad plates.<\/li>\n<li>Sprinkle with sliced strawberries, blueberries, pecans and cheese.<\/li>\n<li>Garish with fresh chopped parsley.<\/li>\n<\/ol>\n<p align=\"LEFT\"><b>Serves: <\/b>10 -12<\/p>\n<p align=\"LEFT\"><b>Source: <\/b> (Salad\/Dressing) Arkansas Department of Parks and Tourism.\u00a0Chef Todd Gold, The Purple Cow Restaurant, Little Rock, Arkansas<br \/>\n(Pecans) cookingweekends.blogspot.com<\/p>\n<p align=\"CENTER\">\n","protected":false},"excerpt":{"rendered":"<p>I know &#8211; caramel in salad dressing???? \u00a0 But it does work!
