{"id":9977,"date":"2023-10-10T17:07:04","date_gmt":"2023-10-10T23:07:04","guid":{"rendered":"https:\/\/hill-kleerup.org\/blog\/margie\/?p=9977"},"modified":"2023-10-10T17:07:04","modified_gmt":"2023-10-10T23:07:04","slug":"marry-me-chicken","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/margie\/marry-me-chicken.html","title":{"rendered":"Marry Me Chicken"},"content":{"rendered":"<p><em>This cozy dish, which went viral on TikTok with claims that if you prepare it for someone, you will end up getting married, features boneless chicken breasts nestled in a creamy, tomato-y sauce. \u00a0Try it over pasta, rice or polenta.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>3 large boneless, skinless chicken breasts, or 6 chicken cutlets (about 2\u00bc pounds total), patted dry (or use slightly pounded chicken tenders)<\/li>\n<li>Kosher salt<\/li>\n<li>black pepper<\/li>\n<li>\u00bc c flour<\/li>\n<li>3 Tab olive oil plus more as needed<\/li>\n<li>3 Tab\u00a0 butter<\/li>\n<li>3 garlic cloves, chopped<\/li>\n<li>1 Tab tomato paste<\/li>\n<li>\u00bd tsp dried oregano<\/li>\n<li>Red-pepper flakes, to taste<\/li>\n<li>1 c low-sodium chicken stock<\/li>\n<li>\u00bd to \u00be c heavy cream<\/li>\n<li>\u00bd c (1\u00bd ounces) grated Parmesan<\/li>\n<li>\u2153 c (2.4 ounces) sliced sun-dried tomatoes, packed in oil<\/li>\n<li>Fresh basil, for serving<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ol>\n<li>If using chicken breasts, start from the thickest end and slice each chicken breast in half horizontally so you end up with a total of 6 cutlets.\u00a0 To make it easier to slice into cutlets, place the chicken breasts in the freezer for 20 minutes.<\/li>\n<li>Season both sides of the chicken cutlets well with salt and pepper.<\/li>\n<li>Scatter the flour on a large plate and coat the cutlets, shaking off the excess.<\/li>\n<li>Transfer the cutlets to a sheet pan or large plate in a single layer.<\/li>\n<li>Heat the oil in a large pan over medium-high.<\/li>\n<li>Once hot, reduce the heat to medium.<\/li>\n<li>Add the butter.<\/li>\n<li>As soon as it melts, add the cutlets.<\/li>\n<li>Cook until golden on one side, about 5 minutes.<\/li>\n<li>Flip the chicken and cook the other side until golden, 4 to 5 minutes. Do this in batches, if needed, adding more oil, if needed.<\/li>\n<li>Transfer the cutlets to a plate or sheet pan.<\/li>\n<li>Reduce the heat to low.<\/li>\n<li>Add the garlic and cook, stirring often, until fragrant, 1 to 2 minutes.<\/li>\n<li>Add the tomato paste, stirring until the color deepens, about 2 minutes.<\/li>\n<li>Add the oregano and red-pepper flakes, to taste.<\/li>\n<li>Increase the heat to medium, add the stock and bring to a simmer, scraping up any bits from the bottom of the pan, until the liquid is reduced by half, about 5 minutes.<\/li>\n<li>Add \u00bd cup of the cream and warm through, stirring, until it thickens slightly, about 3 minutes.
