{"id":1918,"date":"2002-04-09T12:57:01","date_gmt":"2002-04-09T17:57:01","guid":{"rendered":"http:\/\/hill-kleerup.org\/blog\/wp\/?p=1918"},"modified":"2002-04-09T12:57:01","modified_gmt":"2002-04-09T17:57:01","slug":"beef_its_whats","status":"publish","type":"post","link":"https:\/\/hill-kleerup.org\/blog\/2002\/04\/09\/beef_its_whats.html","title":{"rendered":"Beef &#8212; It&#8217;s What&#8217;s for Dinner"},"content":{"rendered":"<p>Here&#8217;s an interesting New York Times Magazine article on <a href=\"http:\/\/www.nytimes.com\/2002\/03\/31\/magazine\/31BEEF.html?pagewanted=1\">the life of a steer<\/a> in today&#8217;s beef industry.<\/p>\n<p>What&#8217;s interesting about it is that it is neither an apology for the industry, nor is it a heartstring-pulling gut-wrenching <i>Jungle<\/i>-style animal rights expose.  Instead, it looks at the economics &#8212; both obvious and subtle &#8212; of America&#8217;s passion for cheap meat, and, unsentimentally but not without some emotion, how that impacts Steer No. 534.<\/p>\n<p>Am I off beef, now that I&#8217;ve read it?  No.  And, really, we don&#8217;t eat a huge amount of it at home (more chicken, and even just pasta or salad).  But we do eat it, and will continue to.<\/p>\n<p>But I am aware that, over the coming decade, we&#8217;ll see a change in its availability, its nature, and, most significantly, its cost, as both the society ethics and the economies of the present industry force beef into a less predominant role in our diet.
