Corn Casserole from Kay

This is an outstanding addition to a barbecue!  Or any meat that does not have gravy or sauce.

Ingredients:

  • 1 lb corn – fresh/canned/frozen (2 c fresh)
  • 1/3 c corn meal
  • 1 c grated cheese
  • 4 oz diced chili
  • 1 tsp salt
  • 2 Tab butter

Directions:

  1. Preheat oven to 350°.
  2. Mix 1/2 the corn in a bowl with the chili and cheese.
  3. Process 1/2 the corn with the rest of the ingredients in a food processor.
  4.  Mix.
  5. Bake covered for about 1 hour, until firm.
  6.  Serve with sour cream and Pace Picante sauce.

Serves:  4
