This is a little more hearty camping breakfast. Good for the second day breakfast when everyone is not so anxious to get out and “do stuff”.
Ingredients:
- 1 lb bacon, cut in small pieces (diced ham or spam may be substituted for bacon)
- 2 29 oz cans potatoes
- 12 eggs
- Salt and pepper
Directions:
- Fry bacon. (Use a little oil/butter if using ham)
- Drain away most of the bacon fat.
- Cube and add potatoes, salt and pepper.
- Scramble and fry eggs in separate pan.
- Add eggs to potato mixture.
Serves: 10
