Unlike most salads with strawberries, this is a savory, not sweet,dressing.
Ingredients:
- 2 # strawberries, hulled and halved or quartered
- ¼ c balsamic vinegar, or more to taste
- Freshly ground black pepper
- 10 c arugula leaves or mixed spring lettuce
- Salt
- ½ c extra virgin olive oil
- 2 c crumbled goat cheese (10 oz)
Directions:
- Toss the strawberries with the vinegar and black pepper in a large salad bowl and let sit for 10 minutes.
- Add the arugula.
- Sprinkle with salt, and toss again.
- Drizzle with olive oil and toss gently one last time.
- Taste, adjust the seasoning
- Serve on salad plates
- Top with crumbled got cheese.
