Glazed Mint Carrots

The sweet, minty sauce makes these carrots just a bit different.
Ingredients:
1 c water
1/4 tsp salt
6 medium carrots, julienned
2 Tab butter
1 Tab confectioners’ sugar
1 1/2 tsp minced of fresh mint

Instructions:

  1. In a saucepan, bring water and salt to a boil.
  2. Add carrots.
  3. Cook for approximately 8 minutes until crisp-tender.
  4. Drain.
  5. Set carrots aside.
  6. In the same saucepan, melt butter, stir in sugar and mint until well blended.
  7. Return carrots to the pan.
  8. Cook and stir for 2-3 minutes until carrots are tender and evenly coated.
  9. Serve warm.
