Pretty simple, but a nice variation on theme.
Ingredients:
- 4 Tab butter (½ stick)
- 2 large sweet onions, quartered and thin sliced
- 2 lbs fresh green or frozen green beans
- 1/4 tsp salt
- 1/8 tsp pepper
Directions:
- Melt butter in a large nonstick skillet.
- Add onions and cook over medium heat 15 minutes, stirring occasionally, until golden and tender.
- Meanwhile, cook green beans in lightly salted boiling water to cover until crisp-tender.
- Drain green beans. Return to pot.
- Reserve some of the sautéed onions to use as a garnish
- Add remaining onions to pot.
- Add salt and pepper and toss to coat.
- After serving, scatter reserved sautéed onions over top.
