Ingredients:
- 29¢ bag Fritos corn chips (or 4 cups – 9+ oz)
- 3 c chili con carne (or whatever a can is now)
- 1 small onion (diced)
- 1 small can sliced olives
- 4 c cheddar cheese (shredded) divided (1 lb)
Directions:
- Preheat oven to 350°.
- In a 13×9″ casserole baking dish evenly distribute the corn chips.
- Mix in 2 cups cheese.
- Mix in onion and olives.
- Pour the chili con carne on top.
- Sprinkle rest of cheese over top.
- Bake for 10-12 minutes until heated through and cheese has melted.
- Serve with optional toppings like chopped tomatoes, avocado, cilantro, sour cream and pickled jalapeños.
