These are a great addition to an antipasto tray – or good by themselves!
Ingredients:
- 1 Tab salt
- 1 lb fresh button mushrooms
- 1/2 c onion, chopped
- 1 clove garlic, finely chopped
- 1/4 c parsley chopped
- 2 bay leaves
- 1/8 tsp pepper
- 1/2 tsp dried thyme
- 2 c white wine
- 1 c white vinegar
- 1 c water
- 1/2 c olive oil
- 2 Tab lemon juice
Directions:
- Add salt to 6 cups cold water.
- Wash the mushrooms in this.
- Drain.
- Combine remaining ingredients in large sauce pan.
- Add mushrooms.
- Bring to boiling point and reduce heat.
- Simmer covered for 8 – 10 minutes or until mushrooms are tender.
- Refrigerate covered at least one hour.
Serves: 6

Looks yummy. I just learned the joys of quick pickling. Did apples and carrots as a slaw-type dish for this weekend. Went over well.
