Drunken Tuna Dip

A great dip that can double as a sandwich spread.  Easy ways to change it up – smoked tuna, Mircle Whip, Greek yogurt.  You might even sneak in canned chicken instead of tuna.  You can serve it served at room temperature or chilled.

Ingredients:

  • 1 1/2 Tab brandy
  • 1 c cream cheese, softened  (8 oz)
  • 1/4 c sour cream
  • 1/4 c mayonnaise
  • 3/4 c fresh tuna, flaked, or 6 1/2 oz tuna, well drained
  • 2 Tab green onion, minced, use all
  • 1 Tab lemon juice
  • 1/8 tsp hot sauce
  • 1/8 tsp salt

Directions:

  1. Beat the brandy and cream cheese to a smooth and creamy consistency.
  2. Blend in the sour cream and mayonnaise.
  3. Mix in the tuna and green onion, blending well.
  4. Add the remaining ingredients.
  5. Blend until almost smooth.

Serves:  Makes about 2 1/2 cups of dip.

Bread Dough Ornaments

This is a relly low craft ability project!  Works for Easter, Valentines Day and just for fun.  You can just mold something too, but keep it fairly thin.  Otherwise it takes forever to bake.

Ingredients:

  • 4 c flour
  • 1 c salt
  • 1/2 c water

Useful tools, etc.:

  • ornament hangers, paperclips or ribbon
  • Ungreased cookie sheet
  • garlic press – makes hair or fur
  • Other miscellaneous kitchen tools
  • toothpicks
  • straws
  • cookie cutters
  • icing bag and tips (or cut the corner out of a ziploc bag and insert a tip)
  • bowl of water
  • Spray acrylic
  • Some patients and an imagination….

Directions. 

  1. Preheat oven to 275°
  2. Mix flour and salt together in a bowl.
  3. Gradually add water to mixture. (or mix salt and water and add to flour)
  4. Stir with wooden spoon till ball forms.
  5. Place ball of dough on floured board or pastry sheet.
  6. Knead for 10 minutes, till dough is not tacky any more.
  7. Roll dough out to a little less than 1/4 inch.
  8. Dip cutters into flour before cutting.
  9. Before baking use toothpick or straw to make hole in the top for ribbon or hangers.
  10. For colored dough add a little food coloring to some of the dough or just use acrylic paint after you have baked them and let them cool.
  11. Brush lightly with Water to attach dough decorations. Don’t use too much water because the dough pieces will not adhere to each other.
  12. Decorate as you wish.
  13. Bake for 1 hour and 20 minutes at 275°
  14. You can use acrylic paints and varnish for the sheen…Use your imagination

Garlic Dipping Sauce

Try this with just about anythng you would dip – shrimp, veggies, tater tots, etc.

Ingredients:

  • 1/3 c mayo
  • 1/4 c sour cream
  • 2 tsp ninced garlic
  • 1/4 tsp smoked paprika
  • pinch of salt
  • 1/4 tsp black pepper

Directions:

  1. Mix mayo and sour cream.
  2. Add rest of ingredients
  3. Best chilled for several hours or over night

Serves: makes abut half a cup

Marry Me Chicken

This cozy dish, which went viral on TikTok with claims that if you prepare it for someone, you will end up getting married, features boneless chicken breasts nestled in a creamy, tomato-y sauce.  Try it over pasta, rice or polenta.

Ingredients:

  • 3 large boneless, skinless chicken breasts, or 6 chicken cutlets (about 2¼ pounds total), patted dry (or use slightly pounded chicken tenders)
  • Kosher salt
  • black pepper
  • ¼ c flour
  • 3 Tab olive oil plus more as needed
  • 3 Tab  butter
  • 3 garlic cloves, chopped
  • 1 Tab tomato paste
  • ½ tsp dried oregano
  • Red-pepper flakes, to taste
  • 1 c low-sodium chicken stock
  • ½ to ¾ c heavy cream
  • ½ c (1½ ounces) grated Parmesan
  • ⅓ c (2.4 ounces) sliced sun-dried tomatoes, packed in oil
  • Fresh basil, for serving

Directions:

  1. If using chicken breasts, start from the thickest end and slice each chicken breast in half horizontally so you end up with a total of 6 cutlets.  To make it easier to slice into cutlets, place the chicken breasts in the freezer for 20 minutes.
  2. Season both sides of the chicken cutlets well with salt and pepper.
  3. Scatter the flour on a large plate and coat the cutlets, shaking off the excess.
  4. Transfer the cutlets to a sheet pan or large plate in a single layer.
  5. Heat the oil in a large pan over medium-high.
  6. Once hot, reduce the heat to medium.
  7. Add the butter.
  8. As soon as it melts, add the cutlets.
  9. Cook until golden on one side, about 5 minutes.
  10. Flip the chicken and cook the other side until golden, 4 to 5 minutes. Do this in batches, if needed, adding more oil, if needed.
  11. Transfer the cutlets to a plate or sheet pan.
  12. Reduce the heat to low.
  13. Add the garlic and cook, stirring often, until fragrant, 1 to 2 minutes.
  14. Add the tomato paste, stirring until the color deepens, about 2 minutes.
  15. Add the oregano and red-pepper flakes, to taste.
  16. Increase the heat to medium, add the stock and bring to a simmer, scraping up any bits from the bottom of the pan, until the liquid is reduced by half, about 5 minutes.
  17. Add ½ cup of the cream and warm through, stirring, until it thickens slightly, about 3 minutes. Watch the cream closely, reducing the heat if necessary, to maintain a gentle simmer.
  18. Stir in the Parmesan and the sun-dried tomatoes.
  19. Add more cream, if you like, and season the sauce.
  20. Place the chicken back in the pan to warm through, about 4 minutes.
  21. Remove from the heat and scatter basil on top.

Strawberry Yogurt Parfait

This is too simple!  Make it in tall parfait glasses, champagne glasses, on-the-rocks glasses, or mason jars – it all works.

Ingredients:

  • Nonfat/full fat vanilla yogurt
  • Fresh strawberries, sliced
  • Chocolate Decadence Granola – Trader Joe’s (or any granola – add mini chocolate chips – will do)

Directions:

  1. In a clear and pretty glass (it makes it more special) layer the berries then yogurt and granola.
  2. Repeat until the glass is full.
  3. Make sure to dig out some of the chocolate pieces to place on top for an extra tasty (and pretty) parfait.
  4. Enjoy!

Pork Tenderloin Cherry Jubilee

A Family Favorite from the residents at Vi Highlands Ranch.

Ingredients:

  • 2 pounds pork tenderloin
  • 1 can cherry pie filling
  • 1 clove garlic
  • 1/4 tsp crushed sage
  • 1/4 tsp pepper
  • 1/2 c sherry or brandy

Directions:

  1. Preheat oven to 350°.
  2. Place pork tenderloin in a shallow casserole.
  3. Rub it with garlic, sage and pepper.
  4. Mix cherry pie filling with brandy
  5. Spread over the tenderloin.
  6. Bake uncovered at 350 for 1 hour.  (145°)
  7. Slice and serve with cherry sauce from casserole.

Peach Melba Icebox Cake

The classic peach melba is a dish of skinned peaches which you serve with vanilla ice-cream and raspberry sauce. It was created in the 1890s by the famous French chef Auguste Escoffier, who was then in charge of the kitchens at The Savoy in London. He made it and named it in honour of the Australian opera star, Dame Nellie Melba, whilst she was performing at Covent Garden.

Ingredents:

  • 2 c heavy cream
  • 1/2 c peach jam, or more as needed
  • 1/3 c sugar
  • 2 tsp vanilla extract
  • 1/2 to 3/4 tsp almond extract
  • 2 medium peaches, halved, pitted and roughly chopped into 1/2- inch pieces
  • 5 c fresh raspberries (way too much – think 8 inch square – maybe 2 baskets)
  • 25  crisp, thin almond wafer cookies,  or 70  vanilla wafers or 20 sheets graham crackers (Look for flat, rectangular cookies, they fit.)
  • Toasted almond slices, for garnish

Directions:

  1. Add the cream to the bowl of a stand mixer fitted with the whisk attachment.
  2. Whisk on medium to mediumhigh speed, 2 to 3 minutes, until the cream begins to thicken.
  3. Add the jam, sugar, vanilla extract and almond extract, to taste.
  4. Continue to whisk on medium to medium-high speed for about 3 more minutes, until stiff peaks form.
  5. Use a rubber spatula to gently fold the peaches into the cream.
  6. Use a small offset spatula or the back of a spoon to spread a layer of cream, about 1 1/2 cups, on the bottom of an 8-inch square pan.
  7. Cover the cream with a layer of raspberries,
  8. Then a layer of almond cookies, filling any gaps with broken cookies (breaking them yourself, if necessary). The pieces should touch; the goal is a solid layer of cookies.
  9. Continue with additional layers of whipped cream, raspberries and cookies, ending with a layer of whipped cream.
  10. Gently cover the pan with plastic wrap.
  11. Refrigerate the cake for 6 to 8 hours, or preferably overnight. (or freeze for easier serving)
  12. Peel off the plastic wrap.
  13. Garnish the top of the cake with the toasted almonds.
  14. Cut the cake into slices while in the pan and serve.

Dark and Stormy Icebox Cake

A dark and stormy cocktail is made with dark rum and ginger beer, garnished with a slice of lime. The drink’s flavors translate beautifully when refashioned as an icebox cake. Layers of crispy ginger snaps replace the beer and are alternated with two flavors of whipped cream — dark rum and lime. *

Ingredients:

3 c heavy cream
1/2 c granulated sugar
4 tsp vanilla extract
2 Tab dark rum
2 to 3 Tab finely grated lime zest, plus more for decorating
2 to 3 Tab fresh lime juice, or more as needed
gingersnaps, or other crisp ginger cookie

Directions:

  1. Line a 9-by-5-by-2-inch loaf pan with a large sheet or two of plastic wrap so the wrap overhangs the pan on all sides.
  2. Put the cream in the bowl of a stand mixer fitted with the whisk attachment.
  3. Whisk on medium to mediumhigh speed for 2 to 3 minutes, until the cream begins to thicken.
  4. Add the sugar and vanilla,
  5. Whisk about 3 more minutes, until stiff peaks form.
  6. Transfer half of the cream to a small mixing bowl.
  7. Add the rum to the cream still in the stand mixer bowl.
  8. Whisk on medium-high speed about 30 seconds, or until combined.
  9. By hand, gently whisk the lime juice and zest, to taste, into the remaining whipped cream.
  10. Use a small offset spatula or the back of a spoon to spread a layer of rum cream, about 1 cup, on the bottom of the pan.
  11. Cover as much of the cream as possible with a layer of gingersnaps, filling any gaps with broken snaps (breaking them yourself, if necessary). The pieces should touch; the goal is a solid layer of cookies.
  12. Add a layer of the lime whipped cream, about 1 cup, and cover with another solid layer of snaps.
  13. Continue layering, alternating flavors of whipped cream and cookies until you run out, ending with a layer of lime whipped cream that rises slightly above the edge of the pan.
  14. Cover the cake with the overhang of plastic wrap.
  15. Refrigerate for 6 to 8 hours, or preferably overnight.
  16. Invert the cake onto a serving platter.
  17. Lift the pan off.
  18. Peel away the plastic wrap.
  19. Sprinkle the top of the cake with additional lime zest.
  20. When ready to serve, slice the cake with a long serrated knife and garnish with additional lime zest grated on top.

Next time  nake it . . . So many changes.

  1. Pulvarize the cookies.  Cookies do not break in the right shape/size. Used one 12 oz store brand box.
  2. Add 1 tsp ginger chips or chrystalize ginger to the lime juice.  Ginger beer tastes like GINGER.
  3. Make it in a 11×7 pan – fewer layers, like only 3.
  4. Speaking of the pan, did you really use plastic wrap?  Even freezing it for 1/2 hour, the plastic couldn’t be placed in the pan with any degree of correct size/shape.  I went with nonstick foil.
  5. Divide the whipped cream 1/3 in smaller bowl, 2/3 in mixer bowl.
  6. Next time I will layer 1/2 the rum cream, 1/4 cookie crumbs, all lime cream, 1/4 crumbs, rest of rum cream. 1/4 crumbs.  Save remaining crumbs for the top  you turn it over and unmold it. Because, of course, you did not save any zest and used the last lime for a Dark and Stormy.

P.S. Freezing would not hurt it and make it much easier to slice.

Authentic Greek Tzatziki

“What is Tzatziki sauce?” This is a classic Greek appetizer (or “meze”) made from thick strained yogurt, cucumber, garlic, olive oil, and fresh dill.  It’s super simple to make and a hit at any get-together.  Also, if you are looking for a vegan tzatziki sauce or a dairy free tzatziki sauce, then just use coconut milk yogurt instead of Greek yogurt.

Ingredients:

  • 1/2 of a large cucumber, unpeeled
  • 1 1/2 c plain full-fat Greek yogurt
  • 2 large garlic cloves, finely minced
  • 2 T extra virgin olive oil
  • 1 T white vinegar
  • 1/2 tsp salt
  • 1 T minced fresh dill (Use 1 tsp dried dill instead of 1 T of fresh dill.)

Directions:

  1. Grate 1/2 of a large cucumber, unpeeled.
  2. Drain the grated cucumber through a fine mesh sieve.
  3. Allow the grated cucumber to drain overnight in the fridge by placing the sieve over a bowl and covering with plastic wrap. If you don’t have time to do the overnight drain, just press the cucumber in the sieve to press out more of the liquid.
  4. Add Greek yogurt, garlic cloves, finely minced, extra virgin olive oil, white vinegar and salt into a large bowl.  For  best results, combine all of the ingredients except for the cucumber and dill, then let it rest overnight in the fridge while your cucumber is draining.  The longer the garlic rests in the yogurt, the better it will taste.
  5. Mix the yogurt and other ingredients well.  The yogurt mix should be smooth.
  6. Cover and refrigerate the yogurt mix overnight.
  7. The next day, when you are ready to serve the tzatziki, mince the fresh dill.
  8. Take the yogurt mixture out of the refrigerator and transfer the grated cucumber (but not the water) and fresh dill into the yogurt mixture.  Add the dill at the last minute so it doesn’t overwhelm the rest of the flavors.
  9. Stir well to combine in the cucumber and dill.
  10. Serve chilled with pita bread and veggies for dipping.

Generally, it should be fine for up to 3 days in a container with a lid in the refrigerator. Some of the water may separate, but you can just stir it back in before serving.

You can freeze tzatziki sauce; however, it won’t have the same consistency as when it was freshly made. The cucumbers can get mushy in the freezer

Mahir’s Gorgonzola Pasta

Did you know you can cook your rigatoni (or any pasta actually) up to 48 hours before you want to serve it. Once your noodles are finished boiling (al dente), you take them out of the pot, take one or two tablespoons of olive oil per pound and drizzle it onto your noodles, tossing them to make sure they are all coated. Once your noodles cool for about 15 minutes, dump them in a large Ziploc bag and put the sealed bag in the refrigerator.  Time to serve – set your pasta pot on the stove and bring salted water to a boil. Add the pasta. A 30 second soak is all you need. The point here is to warm the pasta to serving temperature and remove most of the oil. 

Ingredients:

  • 1 1/2 lbs Rigatoni pasta cooked
  • 6 Tab butter
  • 4 c heavy cream (1 qt)
  • 8 oz crumbly Gorgonzola (not creamy or “dolce”)  1/2 lb
  • 4 Tab grated Parmesan
  • 1/2 tsp salt
  • 1/2 c minced fresh parsley

Directions:

  1. Melt butter in large pan.
  2. Add salt, parsley and cream.
  3. Heat to just before boiling.
  4. Add Gorgonzola.
  5. Stir until cheese melts and it begins to thicken (3-5 minutes).
  6. Add Romano cheese.
  7. Stir and cook 2 minutes more.
  8. Mix with pasta.
  9. Serve.

Serves:  Makes 3 cups – about 4 people
