These are really pretty cookies.
Cookie Ingredients:
- 1 c butter
- ½ tsp salt
- ¾ c powdered sugar
- 2 egg yolks
- 2 1/4 c flour
Cookie Directions:
- Preheat the oven to 350°.
- Grease a 9×13 pan.
- In the bowl of a standing mixer, cream together the butter, salt and sugar.
- Add the yolks and mix well.
- Add the flour and mix until you have a uniform dough.
- Using your fingers, press the dough evenly across the bottom of the pan.
- Bake the dough for 18 minutes at 350°, until light golden.
- Remove from oven and let cool.
- After cookies cool, prepare frosting.
Peppermint Frosting Ingredients:
- ½ c butter
- 3 c powdered sugar
- 1/3c milk
- ½ tsp peppermint extract
- 2 drops red food coloring
- 5 candy canes, crushed
Frosting Directions:
- Combine butter and sugar in the bowl of a standing mixer until smooth.
- Mix milk, food coloring and peppermint.
- Add to butter/sugar in mixer and mix until fluffy
- Transfer all of the frosting to the cooled cookie dough and spread evenly.
- Immediately sprinkle with the crushed candy canes and chill.
- Cut 6 x 10 to make 60 pieces.
Serves: makes 60 bars
