Mimosa

A Mimosa is a cocktail composed of equal parts champagne and chilled citrus juice, usually orange juice unless otherwise specified.
Main alcohol: Champagne although Prosecco or other sparkling wine is good to.  For the non-drinkers – sparkling grape juice is the answer.

Ingredients:

  • 2 1/2 oz (1 part) orange juice,  blood orange juice, tangerine juice, etc.
  • 2 1/2 oz (1 part) Champagne

Directions:

  1. Ensure both ingredients are well chilled,
  2. Then mix into the glass.
  3. Serve cold.

Served: Stirred not shaken
Standard garnish: Cherries, Strawberries, Grenadine
Drinkware: Champagne flute

Hawaiian Iced Tea

Add pizzazz to your lemonade stand!  For adults – you might add rum, vodka, or whisky – just sayin’!

Ingredients: 

  • 2 quarts cold water
  • 15 orange pekoe tea bags
  • fresh mint sprig
  • 1/3 cup sugar
  • 3 lemons, juice of
  • 1/3 cup pineapple juice
  • pineapple, spears ( to garnish) (optional)

Directions:  

  1. In a sauce pan bring 1 quart of cold water to a full rolling boil.
  2. Remove from heat; pour over tea.
  3. Stir and let stand for 5 minutes.
  4. Stir and strain liquid into a pitcher containing 4 mint springs, sugar and 1 quart cold water.
  5. Stir to dissolve sugar.
  6. Cool mixture.
  7. Remove mint before chilling for several hours or overnight.
  8. Stir in pineapple juice.
  9. Serve over ice in tall glasses.
  10. Garnish each glass with a pineapple wedge.

Creolo Cocktail

A non alcoholic drink can be made by increasing the soda and leaving out the rum.  A drop of rum extract will please the non-drinkers.

Ingredients:

  • 50ml. spiced rum (about 1 3/4 oz)
  • 125ml. lemonade concentrate (about 1/2 cup)
  • club soda
  • 1 wedge lemon

Directions:

  1. Fill a tall glass with ice cubes.
  2. Pour rum and lemonade into the glass.
  3. Fill glass with club soda
  4. Garnish with a wedge of lemon.

For a large group (50):

  • 2 frozen lemonade (12 oz size)
  • 90 oz spiced rum
  • 2 liters club soda
  • 8 lemons

Mix in a punch bowl with an ice block.

Serves:   1 or 50

Witches Brew

The dry ice makes it steam and look spooky.  The punch is good without it.  Add a shot of rum ( or vodka) for the adults.

Ingredients:

  • ½ gal cranberry juice, chilled
  • 1 qt orange juice, chilled
  • 1/2 c water
  • 2 tsp sugar
  • 14 cloves
  • 2 cinnamon stick
  • dry ice

Directions:

  1. Bring cinnamon sticks, cloves, water, and sugar to a boil in a small heavy saucepan, stirring until sugar has dissolved, then simmer, covered, 5 minutes.
  2. Remove from heat and let steep, uncovered, 1 hour.
  3. Strain through a fine-mesh sieve into a bowl, discarding solids, then chill until cold.
  4. Combine all remaining ingredients, except ice, with syrup in a punch bowl.
  5. Add ice before serving.

Serves:   Makes 12 cups

If you are not using dried ice, make hand-shaped ice, fill powder-free, latex-free rubber gloves with water and tie wrist end securely, then freeze.

Mint Julep

Around since the 18th century, the mint julep is an American Southern cocktail that originally denoted the provider as a person of means. This mostly comes down to the fact it’s made with ice, and ice was hard to come by back in the olden days. It’s also a drink that was once traditionally served in a silver cup, and silver cups were not exactly common among working folk.  The mint julep is still one of Kentucky’s signature drinks.  And remember – this is a sippin’ drink, not a chuggin’ drink!

Ingredients

  • mint
  • 1 tsp. sugar
  • 3 oz. bourbon
  • old-fashioned glass or pewter cup

Directions

  1. Place 5 or 6 leaves of mint in the bottom of a pre-chilled, dry 12-ounce glass or silver beaker.
  2. Add sugar and crush slightly with a muddler.
  3. Pack glass with finely cracked ice.
  4. Pour a generous 3 ounces of Kentucky bourbon over the ice.
  5. Stir briskly until the glass frosts.
  6. Add more ice and stir again before serving.
  7. Stick a few sprigs of mint into the ice so that the partaker will get the aroma.

A few things to keep in mind for a truly great mint julep:

  • Use a pre-chilled, dry 12- or 14-ounce glass, tall and slim (better yet, a traditional silver beaker).
  • Crack the ice, making sure to drain off any excess water before putting it in the glass.
  • Don’t handle the glass with bare hands, as the touch of a hand kills the frost. Likewise, each julep should be served with a napkin or small linen doily.
  • The glass will not frost if in the wind, if wet, with undried ice, or if excessively handled. You can sometimes speed the frost by twirling the glass or by placing it in coldest part of refrigerator for about 30 minutes.
  • Use only the freshest mint and, of that, the smallest, most tender leaves.
  • If you use a straw, keep it short so you can get your nose in among the mint.

Mint Juleps for a Crowd

On Derby Day, (the first Saturday in May) you should never be far from a mint julep. Sweet and minty with a hefty bourbon punch, this iconic drink is a crowd pleaser.

Ingredients:

  • 1 liter bourbon
  • 40 mint leaves
  • 1 c distilled water (if you are a purist)
  • 1 c granulated sugar
  • Mint sprigs for garnish

Directions:

  1. Prepare the mint extract.
    a.Remove about 40 mint leaves – wash and place in a small bowl.
    b.Cover with bourbon (about 3 oz).
    c. Soak the leaves for at least 15 minutes.
    d. Gather the leaves in a clean, soap-free piece of cotton cloth and vigorously wring the mint bundle over the bowl of bourbon.
    e. Dip the bundle again and repeat the process several times.
    f. Set extract aside.
  2. Prepare the simple syrup.
    a. Mix 1 cup of granulated sugar and 1 cup of water in a cooking pot.
    b. Heat to dissolve the sugar.
    c. Stir constantly so the sugar does not burn.
    d.  Let cool.
  3. Prepare the julep mixture.
    a. Add 1 cup of the simple syrup to 3 ½ cups of bourbon
    b. Add the mint extract small amounts at a time to the julep mixture, and taste as you add. Repeat until right. You are looking for a soft mint aroma and taste – generally about 3 tablespoons of mint extract, but this varies for each batch.
    c. Refrigerate it for at least 24 hours to “marry” the flavors.

4. Serve the juleps.  If you don’t have julep cups, use any cocktail glass that allows your nose to sniff and smell the “bloom” of mint.
a. Pack each glass to the top with crushed ice. Allow the outside of the glass to frost.
b. Pour the refrigerated julep mixture over the ice and garnish with mint sprig.
c. Use a straw, sip slowly, and enjoy!

Serves: 26-30 servings.

Tropical Mimosa

Kick that brunch Mimosa up a notch!

 Ingredients:
  • 1/2 c Mango Nectar
  • 1/2 c Pineapple Juice
  • 1/4 c Orange Juice

Alcoholic Version
         Champagne or Dry Sparkling Wine
Non-Alcoholic Version
        Sparkling White Grape Juice or Sparkling Apple-Mango Juice – or any sparkling juice

Directions:

  1. Once you have your juices mixed, you need to mix your Mimosa. Use  a 50/50 ratio of sparkling drink to juice
  2. Pour the sparkling drink in the glass before the juice.
  3. If you want to be classy, use champagne glasses. If you don’t care, use whenever you have around!
  4. You can also garnish it with sliced pineapple slices if you want to be really fancy.

Serves:  1 (for a little while – mix a batch of juices and be ready for the crowd!)

Bourbon Iced Tea Lemonade Punch

A delicious beverage for a hot summer’s day!
 
Ingredients: Lemon and mint ice mold
  • 3 cups water
  • 2 lemons (thinly sliced into rounds)
  • 1/2 cup mint (leaves)
Ingredients:  Bourbon Iced Tea Lemonade Punch
  • 6 cups boiling water
  • 6 black tea bags
  • 1 cup sugar
  • 6 cups cold water
  • 1 1/2 cups bourbon
  • 1 cup lemon juice
To serve:
  • 1 lemon (thinly sliced into rounds, for garnish)
  • 1/2 bunch mint (leaves, for garnish)
Directions: For the Lemon and Mint Ice Mold
  1. In a 9 1/4-inch ring mold, add the water, lemon slices and mint.
  2. Place in the freezer and freeze for 6 hours or overnight.
  3. When ready to serve, run the ring mold under a little hot water, remove from the pan and place in the punch bowl.

Directions: For the Bourbon Iced Tea Lemonade Punch

  1. In a large pot with 6 cups boiling water, add the tea bags and sugar.
  2. Stir until the sugar dissolves and let steep for 5 minutes.
  3. Discard tea bags.
  4. Stir in the 6 cups of cold water, vodka and lemon juice.
  5. Cover and chill in the refrigerator until ready to use.

Directions:  To Serve

  1. Place the ice mold in a punch bowl and fill with the punch.
  2. Ladle into glasses.
  3. Garnish with a slice of lemon and mint.
  4. Serve immediately.
  5. Tip: Make the ice mold in advance and mix the punch together and keep chilled in the refrigerator. Before the party assemble in the punch bowl to keep cold!

Serves:  6 – 12 (depends on how hot it is!)

Whiskey Sours

“I didn’t know bourbon came in cans.” to quote an Aunt Emma.

Ingredients:

  • 1 can frozen lemonade
  • 1 can bourbon
  • 1 can water
  • 1 lemon

Directions:

  1. Fill blender half full with crushed ice.
  2. Add lemonade, bourbon, water, and juice from the lemon.
  3. Frappe.

Serves:   5

Swan Lake

A bit complicated, but well worth the effort.

Ingredients:

  • 4 oz vanilla vodka, chilled
  • 1 pt light cream
  • 2 oz blue curacao, chilled
  • 2 oz vanilla liqueur (Bols Vanilla), chilled.
  • 1/3 inch long banana slice

Directions:

  1. Mix half of the vodka with light cream, the banana piece and blue curacao in a blender.
  2. Mix the other half of the vodka with the vanilla liqueur in a second blender.
  3. Pour into a stemmed glass simultaneously from both blenders at the same time to get the divided effect.
  4. Decorate with chocolate powder, preferably in the shape of a swan. (Do not attempt after 2 drinks.)
