Easy Pork Loin

So you have that HUGE boneless pork loin from Costco.  Just cut it into usable pieces (1/4 lb per person.) and freeze in individual bags.  Come dinner time (or unexpected guests) just defrost (in the microwave if necessary) and brush on the sauce (adjust for the size of you meat) and cook.  You can even cook it in the microwave.  The sauce is also good on chicken.

Ingredients:

  • 1 12 oz frozen orange juice concentrate – don’t reconstitute
  • 1/4 c soy sauce
  • 10# pork roast

Directions:

  1. Heat oven to 350°.
  2. Pat pork dry with paper towel.
  3. In small bowl, combine soy sauce and orange juice concentrate.
  4. Apply to all surfaces of the pork roast.
  5. Place roast in a shallow pan and roast in a 350°. oven for 1 hour (20 minutes per pound), until internal temperature on a meat thermometer reads 145°.  Do not overcook.  Pork today is very lean – no fat means dry meat.
  6. Remove roast from oven.
  7. Let rest about 10 minutes before slicing to serve.

Serves:  40  (plan on 1/4 to 1/3 pound per person.)

Bacon and Egg Breakfast Cups

If you can find pre-cooked bacon – sort of half cooked – or do it yourself the cups will be crisper and less fat in the bottom.

Ingredientss:

  • 12 slices bacon
  • 8 eggs
  • 1/2 cup shredded cheddar or mozzarella cheese
  • pinch of salt
  • 1/4 tsp black pepper

Directions:

  1. Preheat oven to 350°.
  2. Whip the eggs, salt, pepper and cheese with a fork.
  3. Spray non stick spray in 12 muffin tins.
  4. Wrap each piece of bacon inside the sides of each muffin cup.
  5. Fill each bacon lined muffin cup 3/4 of the way with the egg mixture.
  6. Bake for 30-35 minutes, until the egg cups are golden brown and don’t jiggle.
  7. Use a knife to scoop them out of the tins.
  8. Serve immediately.

Serves:   Makes 12 but probably serves 4 – 6.

Slab O’Salmon

The beauty of this salmon is you can grill it early (freeze if more that 2 days) and finish it in the oven the day of the event.  Serve it hot or cold, entree or appetizer.  

Ingredients:

  • Salmon fillet (skinless from Costco) 5-6 lbs
  • 1/4 lb butter – melted
  • juice of 1 – 2 lemons
  • salt and pepper

Directions:

  1. Place salmon on the grill (“good” side down).
  2. Grill until marks show on salmon – about 5 minutes.
  3. Turn over.
  4. Grill until marks show on salmon another 5 minutes.
  5. Remove from grill – no, it is not completely cooked.
  6. When ready to serve, place in 350° oven for 10 minutes (until barely done – still almost raw in the center of the thickest part).
  7. Finish under the broiler if needed to make it nicely brown.

Serves:  8-10 for dinner, 20 or so for a party.

Cherry-Pineapple Nut Cake

Heloise has a treasure trove of quick, easy, and somewhat old fashioned recipes.  

Ingredients:

  • 1 20-ounce can of crushed pineapple in heavy syrup
  • 1 21-ounce can of cherry pie filling
  • 1 package of yellow cake mix (2-layer size)
  • 1 c pecans chopped
  • 1/2 stick of butter (4 Tab) chilled

Directions:

  1. Preheat oven to 350°.
  2. Grease a 9-by-13 inch baking pan.
  3. Spread the pineapple with its syrup evenly in the pan.
  4. Spoon the cherry pie filling evenly over the pineapple.
  5. Sprinkle the dry cake mix evenly over the mixture.
  6. Sprinkle the chopped nuts over all.
  7. Slice the chilled butter into thin slices, then place evenly over the other ingredients.
  8. Place your cake pan in the center of the rack, and in the middle of the oven, for an evenly baked cake.
  9. Bake for 50 minutes, or until golden.
  10. Serve warm

Serves: 12 .

Meatball Sandwiches

Some things can be made easily when necessary – camping, in a hurry, lazy.  Still good and filling.

Ingredients:

  • 2 #10 cans marinara sauce
  • 1 1/2 lb. frozen fully cooked meatballs – 1 oz size
  • 180 inches crusty sandwich rolls or bread, split
  • 2 # shredded mozzarella cheese
  • 2 c chopped onion

Directions:

  1.  Heat marinara sauce
  2. Stir in meatballs.
  3. Bring to boil on medium-high heat, stirring occasionally.
  4. Simmer on medium-low heat 8 min. or until meatballs are heated through, stirring occasionally.
  5. Spoon into rolls.
  6. Top with mozzarella.
  7. Add onion for those who wish.

Serves: 50

Keith Famie’s African Adventure Cape Brandy Sauce

This is a thin, quite brandy flavored, sauce – perfect for bread puddings.  It soaks in and flavors each bite!  Try it on waffles for a more “sophisticated” brunch treat.

Ingredients:

  • 1 Tab melted butter
  • 1 c sugar
  • 1/4 tsp salt
  • 5 ounces water
  • 1/2 c brandy
  • 1 tsp vanilla extract

Directions:

  1. In a saucepot, heat the butter, sugar, salt, and water for 5 minutes.
  2. Then add the brandy and vanilla extract and heat an additional minute.

Serves:  makes about 1 cup
