The cheater version works great – good on a turkey sandwich or a ham sandwich.
Ingredients:
- ½ red onion, diced
- 2 tsp olive oil
- 2 c fresh cranberries
- ½ c apple cider vinegar
- ½ c water
- ½ tsp salt
- ½ tsp cracked pepper
- ⅓ cup sugar
- 4 Tab whole mustard seeds
- 1 Tab ground mustard
- ½ tsp ground allspice
Directions:
- In a medium sized heavy bottom pot, sauté the onion over medium high heat until just tender, about 5 minutes.
- Add the remaining ingredients.
- Stir to combine.
- Bring to a simmer, cover.
- Turn heat to low for 10 minutes.
- Turn heat off, leave covered and let stand for one hour.
- Check consistency. If you like a looser mustard, add a few tablespoons of water to get it to desired consistency.
- Preserve like you would jam, or refrigerate.
Cheater version: Mix 2 parts cranberry sauce with 1 part whole grain mustard.
