A basic, but different salad. In a pinch you can use a bottled Raspberry Vinaigrette. The dressing is also really good with a grapefruit and avocado salad.
Ingredients:
- 1 head romaine lettuce
- 1 roughly chopped grapefruit
- ¼ pound Stilton (or other blue cheese)
- ¾ c toasted, chopped walnuts
- Grapefruit Vinaigrette
Directions:
- Tear 1 head romaine lettuce into pieces and put in a bowl.
- Add grapefruit and walnuts.
- Crumble 1/4 pound Stilton on top.
- Dress and toss.

Grapefruit Vinaigrette
Ingredients:
- 1/2 c wine vinegar
- 1/2 c r grapefruit juice
- 1 tsp dried minced onion
- 1/2 tsp Dijon mustard
- 1 tsp sugar
- 1/8 teaspoon salt
- 1/8 tsp pepper
- 1 c olive oil
Directions:
- Combine first 7 ingredients in a medium sized mixing bowl.
- Slowly whisk in olive oil to produce an emulsification.
Serves: Makes about 2 cups
