Sweet Bacon Tater Tots

I dare you to eat just one!

Ingredients:

  • Approximately 50 – 55 frozen tater tots thawed
    1-16- ounce package bacon
  • ⅔ cup brown sugar
  • 2 Tbsp chili powder

Instructions:

  1. Preheat oven to 375 °.
  2. Line a baking sheet with foil and place a cooling rack on top of the foil.
  3. Cut each bacon strip into 3 pieces.
  4. In a small bowl, mix brown sugar and chili powder.
  5. Rub one side of each bacon piece with brown sugar mixture.
  6. Wrap each tater tot with a bacon piece and place it, seam side down, on top of the cooling rack.
  7. Bake for 15 minutes at 375°.
  8. Increase the oven to 400° and bake them for 5 more minutes, or until the bacon is crisp.

Serves:  Well, that is a tricky question!!!  The recipe says 8.

Artichoke and Shrimp Appetizers

This was created when we grew our own artichokes.  Yes, they are expensive, but they make a nice hors d’oeuvre.  Be sure to have a bowl for the used petals.

Ingredients:

  • 4 large artichokes – cooked
  • 1 8 0z block cream cheese (or “soft” cream cheese)
  • 1/8 tsp Tabasco
  • 1 tsp garlic powder
  • a little milk/cream
  • 1 lb small (bay) shrimp

Directions:

  1. Blend cream cheese, Tabasco, garlic powder and enough milk to make a smooth paste.
  2. Pipe about 1/4 to 1/2 teaspoon on the base of an artichoke petal using a pastry tube fitted with a small star tip.
  3. Top with a small shrimp.
  4. Refrigerate up to 2 days.

Serves:  about 100 pieces

Chili Lime Jicama Sticks

Sausage and Pineapple Party Bites

A package of kielbasa in the freezer, can of pineapple on the shelf – instant appetizer.

Ingredients:

  • 1 pack of kielbasa sausages
  • fresh pineapple chunks (obviously better than canned but in a pinch canned will do.)
  • toothpicks or party picks

Directions:

  1.  Cut the sausage into generous inch sized slices.
  2. Gently fry in a little oil on both sides until brown.
    Place the cooked pieces onto some kitchen paper towels to absorb excess fat.
  3. Cut your pineapple chunks into bite sized (about an inch) pieces and place one piece each of pineapple on top of one piece each of sausage and stick it with a toothpick.
  4. They can be served at room temperature.

Servings: 20 pieces

Smokey Links/Meatballs in Fake BBQ Sauce

Ingredients:

  • 3 -5 lbs frozen cooked 1/2 oz meatballs or 3 -5 lbs Smokie Links
  • 1 (32 ounce) jar grape jelly
  • 2 (12 ounce) jars chili sauce
  • 1 pinch cayenne pepper

Directions

  1. In a pot combine the grape jelly with the chili sauce and cayenne if you want spice.
  2. Add in the Smokie Links meatballs and simmer for about 45 minutes uncovered or until the sauce has thickened.

Serves: About 100 pieces

Drunken Kielbasa

So easy, so good.  Do it ahead of time – no one cares if it is hot!

Ingredients:

  • 1 cup chili sauce
  • 1 cup bourbon
  • 1 cup brown sugar, packed
  • 2 pounds sliced kielbasa sausage

Directions:

  1. Mix first three ingredients together.
  2. Pour over thinly sliced sausage in casserole dish.
  3. Bake at 300°, 2-3 hr., until slices are glazed and sauce has thickened.
  4. Can also be done in a crock pot.

Serves:  A lot

Bacon Wrapped Onion Rings

 There are several variations of this on line but there is nothing wrong with an un-enhanced treat.  If you want to try some different treatments try brushing the onions with Shiraka sauce, BBQ sauce, or soy sauce.  
Ingredients:
  • 3-4 sweet onions, large (the flater the better – like Maui onions)
  • 2 lbs bacon, not thick sliced
  • Toothpicks
Directions:
  1. Cut the root end and stem end off the onion.
  2. Peel the skin from the outer layer of the onion.
  3. Cut the onion into ½ inch slices and remove the centers to only leave about 2 layers.  (If your onions are large enough you may get another two layer piece from the center.)
  4. Wrap strips of bacon around the edges of the onion slices. Expect to use about 2-3 slices each.
  5. Lay the bacon wrapped onion rings onto a lined rimmed pan.
  6. Bake at 300° for 30 minutes.
  7. If the bacon is not quite done, turn the rings over and finish in the broiler.
  8. Serve immediately when finished.

Glazed Kielbasa Bites

 These Glazed Kielbasa Bites are the perfect make ahead, bite-sized appetizer. It has a sweet and salty flavor that people can’t stop eating!
Ingredients:
  • 2 lbs. kielbasa, sliced into 1/2 inch pieces
  • 14 oz can pineapple slices, in juice, quartered
  • 3 Tab teriyaki sauce
  • 1 Tab sweet chili sauce
  • 1 Tab honey
  • 1 Tab pineapple juice (from can)

Directions:

  1. Preheat oven to 425°
  2. Place a piece of pineapple on top of a slice of kielbasa.
  3. Stick a toothpick into them.
  4. In a small bowl combine remaining ingredients.
  5. Line a baking sheet with foil and spray with cooking spray.
  6. Place kielbasa bites onto the baking sheet.
  7. rush glaze over tops and sides of bites.  (I found it easier to dip them in the sauce.)
  8. Place in oven and cook for 15 to 20 min (keeping an eye on them).
  9. Remove and enjoy hot!

Serves: 10

Pizza Topping – Bisquick

You can mix this (without the cheese) and freeze it for a quick snack/dinner.  Use any prepared pizza crust or make your own.  Put it on English Muffins and cut in quarters for a kids lunch or a party tid-bit.

Ingredients:

  • 1/4 c chopped onions
  • 1 clove garlic
  • 2 c tomato sauce
  • 1 c chopped salami, or cooked Italian sausage
  • salt and pepper to taste
  • 1 1/2 c grated mozzarella or jack cheese
  • oregano

Directions:

  1. Mix onion, garlic, tomato sauce, salami, salt and pepper.
  2. Spread on dough.
  3. Sprinkle with cheese.
  4. Sprinkle with oregano.

Toasted Cheese Rounds

“Hot canapes infer kitchen bondage, but this need not be true with today’s may conveniences.  This mixture can be prepared in advance and spread before your company arrives.  It’s a triumphant combination, yet very simple.  The aroma alone is a teaser!”

Ingredients:

  • 1/2 c grated mozzarella cheese
  • 1/3 c Parmesan and Romano cheese
  • 3/4 c mayonnaise
  • 1/2 c chopped red onion
  • 1 loaf party rye bread

Directions:  

  1. Mix the cheeses, mayonnaise and onions.
  2. Spread on rye rounds.
  3. Broil until bubbly.
  4. Keep warm on a hot tray.

Serves: 4 – 6 guest
