Mimosa

A Mimosa is a cocktail composed of equal parts champagne and chilled citrus juice, usually orange juice unless otherwise specified.
Main alcohol: Champagne although Prosecco or other sparkling wine is good to.  For the non-drinkers – sparkling grape juice is the answer.

Ingredients:

  • 2 1/2 oz (1 part) orange juice,  blood orange juice, tangerine juice, etc.
  • 2 1/2 oz (1 part) Champagne

Directions:

  1. Ensure both ingredients are well chilled,
  2. Then mix into the glass.
  3. Serve cold.

Served: Stirred not shaken
Standard garnish: Cherries, Strawberries, Grenadine
Drinkware: Champagne flute

Spinach & Artichoke Dip

Another variation on the spinach/artichoke dip.  It’s great when garnished with chopped green onions and tomatoes. Serve it with tortilla chips or pita chips.  Delicious cold, too!

Ingredients:

  • 2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped (or half a large jar.)
  • 1 cup mayonnaise
  • 1 cup grated Parmesan cheese
  • 1 (4 ounce) can diced green chile peppers, drained
  • 1 10 oz package frozen spinach, thawed

Directions:

  1. Preheat oven to 350°.
  2. Drain the spinach.  Squeeze as much water out as you can.
  3. In a medium bowl, mix together the artichoke hearts, mayonnaise, Parmesan cheese and chile peppers.
  4. Transfer the mixture to a 9×9 inch baking dish.
  5. Bake in the preheated oven 20 to 25 minutes, or until lightly browned.

Serves:  4 – 6  (unless you eat it out of the dish with a spoon!)

Potato Bar

We do this with the salad bar -a lot of ingredients work on both salad and potatoes.

Ingredients:

  • 50 small potatoes (can be baked at home and kept in an ice chest)
  • *Chili Love  (6 times the recipe on the blog or see below for large quantity.)
  • ½# onions, chopped
  • 4 c sour cream
  • 1/2 c chives
  • 1 1/2 lbs grated cheese

Directions:

Lay it all out after the salad bar.  People can double back to the salad bar if they want some of the other stuff.

Chili  Love

Ingredients:

  • 90 oz chili with meat (beans or no beans – your choice.  No meat would make it vegetarian.)
  • 48 oz cream cheese – softened, cut into cubes
  • 4 c chopped onions (you can buy these already chopped you know)
  • 90 oz diced tomatoes (canned)

Directions:

  1. Mix and heat.
  2. Stir a lot!

Or, if you have electricity, use a crock pot.

Serves: 50

Scherman Roll-ups

For a quick breakfast – and you don’t need a plate or silverware!  Also works for a snack after school.  Or whenever!

Ingredients:

  • 12 inch flour tortillas (cut in half after cooking)
  • ham (the thin stuff for sandwiches or block, cut into sticks)
  • grated cheese (or cheese cut into sticks)

Directions:

  1. Sprinkle the tortilla with cheese.
  2. Place the sliced ham on top.
  3. Roll up.
  4. Place on pan seam side down.
  5. Bake in 400° oven until cheese melts. (For added calories, brush with butter before baking.)

Or:

  1. Place sticks of ham and cheese on one edge of tortilla.
  2. Roll up.
  3. Place on pan seam side down.
  4. Bake in 400° oven until cheese melts. (For added calories, brush with butter before baking.)

Serves:   1 tortilla (or so) per person

  • 8 dz tortillas
  • 3 lbs ham
  • 4 lbs cheese

Spiced Pumpkin Bread with Chocolate Chips

You don’t have to wait until October to eat things pumpkin.   Good to keep in the freezer for a breakfast bread or dessert.

Ingredients:

  • 3 c sugar
  • 1 c vegetable oil
  • 3 large eggs
  • 1 16-ounce can solid pack pumpkin
  • 3 c all purpose flour
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 c chocolate chips

Directions: 

  1. Preheat oven to 350°F.
  2. Butter and flour two 9 x 5 x 3-inch loaf pans.
  3. Beat sugar and oil in large bowl to blend.
  4. Mix in eggs and pumpkin.
  5. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl.
  6. Stir into pumpkin mixture in 2 additions.
  7. Mix in walnuts, if desired.
  8. Divide batter equally between prepared pans.
  9. Bake until tester inserted into center comes out clean, about 1 hour 10 minutes.
  10. Transfer to racks and cool 10 minutes.
  11. Using sharp knife, cut around edge of loaves.
  12. Turn loaves out onto racks and cool completely.

Serves:    2 loaves

Grilled Rum Pineapple

Appetizer or dessert – take your choice.  Save the rum for your next MaiTai.

Ingredients:

  • 3 ripe pineapple peeled, cored and quartered lengthwise
  • 3 c rum
  • toothpicks

Directions:

  1. Slice each quarter into 10 pieces.
  2. Place in a large bowl or self-sealing bag.
  3. Add rum.
  4. Let marinate for 6 hours, or overnight.
  5. Place on a rack over a rimmed pan (lined with foil for easy cleanup).
  6. Place under broiler for about 5-8 minutes, until lightly browned.
  7. Serve on tray with toothpicks.

Serves: 120 pieces

If camping, slice the pineapple into rings.  Grill.  Cut into quarters to serve.  For a not-quite-as-good non-alcoholic dessert, just slap the pineapple slices on the grill, turn and top with a little brown sugar.

Hawaiian Iced Tea

Add pizzazz to your lemonade stand!  For adults – you might add rum, vodka, or whisky – just sayin’!

Ingredients: 

  • 2 quarts cold water
  • 15 orange pekoe tea bags
  • fresh mint sprig
  • 1/3 cup sugar
  • 3 lemons, juice of
  • 1/3 cup pineapple juice
  • pineapple, spears ( to garnish) (optional)

Directions:  

  1. In a sauce pan bring 1 quart of cold water to a full rolling boil.
  2. Remove from heat; pour over tea.
  3. Stir and let stand for 5 minutes.
  4. Stir and strain liquid into a pitcher containing 4 mint springs, sugar and 1 quart cold water.
  5. Stir to dissolve sugar.
  6. Cool mixture.
  7. Remove mint before chilling for several hours or overnight.
  8. Stir in pineapple juice.
  9. Serve over ice in tall glasses.
  10. Garnish each glass with a pineapple wedge.

Serves:    6-8

Deviled Ham Spread

Not terribly fancy, but quick and easy.  You probably could have everything in the kitchen anyway.

Ingredients:

  • 2 (4 1/4 ounce) cans canned deviled ham
  • 2 (8 ounce) packages cream cheese
  • Tabasco – how hot do you like it???
  • 1⁄2 cup ketchup

Directions:  

  1. Blend all ingredients together with mixer. I soften the cream cheese first.
  2. Serve with Triscuits or  crinkle potato chips.

Serves:  4-6

Creolo Cocktail

A non alcoholic drink can be made by increasing the soda and leaving out the rum.  A drop of rum extract will please the non-drinkers.

Ingredients:

  • 50ml. spiced rum (about 1 3/4 oz)
  • 125ml. lemonade concentrate (about 1/2 cup)
  • club soda
  • 1 wedge lemon

Directions:

  1. Fill a tall glass with ice cubes.
  2. Pour rum and lemonade into the glass.
  3. Fill glass with club soda
  4. Garnish with a wedge of lemon.

For a large group (50):

  • 2 frozen lemonade (12 oz size)
  • 90 oz spiced rum
  • 2 liters club soda
  • 8 lemons

Mix in a punch bowl with an ice block.

Serves:   1 or 50
