KOA 1998 Martha Stewart at the Lake

Lovely Lake Casitas is the site for KOA 98. It is conveniently located between Santa Barbara and Ventura nestled between the sandy beaches of the coast and spectacular mountains towering over the Ojai Valley.  Lake Casitas has 32 miles of shoreline and 6,200 acres of oak trees and rolling hills.  The lake is filled with trout, bass, catfish, crappie and sunfish – fishing is allowed, but no swimming or skiing.

The secluded lake view group camp site will be our home. Rustic vault facilities and coin operated hot showers enhance the wilderness experience. The food will be up to Martha’s exacting standards of bountiful portions and extravagant presentation. The company will of course be that idiosyncratic mix of people we have all come to expect. Focicca

This is a real no-brainer!  Never the same twice.   If you can get the restaurant sheets of dough – great.  If not roll the frozen bread loaf dough about 1/2 inch thick.

Ingredients:

  • Bread Dough
  • Olive oil
  • Parmesan cheese – grated
  • Other stuff – let your imagination run wild!

Directions:

  1. Preheat the oven to 275°.
  2. Coat 13×10-inch baking sheet with 1 tablespoon oil.
  3. Using fingertips, press out dough to 13×10-inch rectangle. (Or whatever size to be 1/2 inch thick.  Doesn’t even have to be square, really)
  4. Let dough rest 10 minutes.
  5. Drizzle 2 tablespoons oil over dough.
  6. Sprinkle “stuff” evenly over the dough.
  7. Let dough rise uncovered in warm area until puffy, about 25 minutes.
  8. Press fingertips all over dough, forming indentations.
  9. Bake bread until brown and crusty, about 20 minutes.
  10. Serve bread warm or at room temperature.

Serves:  Depends on the bread size.

Source:    We just did it.

Notes:  “Stuff” – olives, chopped rosemary, basil, garlic, oregano, diced tomatoes (drained on a paper towel) or sun-dried tomatoes, sea salt, red pepper flakes,  just about anything!

Cheese-Garlic Biscuits

Quick and  easy.  No rolling or cutting.  You can change the flavor by using different cheeses.

Ingredients:

  • 2 c Original Bisquick™ mix
  • 2/3 c milk
  • 1/2 c shredded Cheddar cheese (2 ounces)
  • 2 tbs butter
  • 1/8 tsp garlic powder  (or more)

Directions:

  1. Heat oven to 450ºF.
  2. Stir Bisquick mix, milk and cheese until soft dough forms.
  3. Drop dough by 9 spoonfuls onto ungreased cookie sheet.
  4. Bake 8 to 10 minutes or until golden brown.
  5. Stir together butter and garlic powder.
  6. Brush over warm biscuits.

Serves:  9

French Onion Garlic Bread

A yummy variation on garlic bread.  We add garlic to everything – hence the name.

Ingredients:

  • 1 loaf French bread
  • 1/4 lb butter, softened
  • 1 envelope Lipton Onion Soup Mix
  • 1 clove garlic, crushed (not in original recipe – but sooo good!)

Directions:

  1. Slice bread (like for sandwiches).
  2. Mix butter and soup mix (and garlic) until well blended.
  3. Spread on one side of each slice of bread.
  4. Push loaf back together.
  5. Wrap in aluminum foil.
  6. Bake at 350 ° for approx. 30 minutes.

Or:

  1. Slice loaf horizontally.
  2. Spread both sides with onion soup butter.
  3. Put back together.
  4. Wrap in foil.
  5. Smash 2 – 3 soda/beer cans flat.
  6. Place on grill.
  7. Place foil wrapped bread on top of them.
  8. Heat 10 – 15 minutes depending on the fire.

Serves:  One loaf (we plan on about 2 inches per person)

Tropical Mimosa

Kick that brunch Mimosa up a notch!

 Ingredients:
  • 1/2 c Mango Nectar
  • 1/2 c Pineapple Juice
  • 1/4 c Orange Juice

Alcoholic Version
         Champagne or Dry Sparkling Wine
Non-Alcoholic Version
Sparkling White Grape Juice or Sparkling Apple-Mango Juice – or any sparkling juice

Directions:

  1. Once you have your juices mixed, you need to mix your Mimosa. Use  a 50/50 ratio of sparkling drink to juice
  2. Pour the sparkling drink in the glass before the juice.
  3. If you want to be classy, use champagne glasses. If you don’t care, use whenever you have around!
  4. You can also garnish it with sliced pineapple slices if you want to be really fancy.

Serves:  1 (for a little while – mix a batch of juices and be ready for the crowd!)
